I love to make compact-foods for my son. Everything in one, so that I know he is getting a well-balanced meal. Also, with a recipe like this, you are giving your child a multitude of veggies (rather than just cooking up one per meal). This recipe has endless possibilities. No need to go out to the store for specific items. Just use the veggies you have on hand (broccoli, asparagus, carrot, potato, tomato, spinach, etc). Don’t think about it too much! Finally – this is a great freezer meal. Put a few servings in the fridge, and a few servings in the freezer for weeks to come.

1 cup zucchini, grated
1 cup cheese, grated
1/2 cup sweet potato, small cubes
1/2 cup ham, small cubes
3 eggs
1/3 cup milk
1 Tsp dried herbs (I used parsley and oregano)

In a bowl, place all the ingredients and mix to combine well. Place in a mini muffin tray. Bake at 425 degrees for 15 minutes or until cooked through. It’s that simple, let cool and let your little one feed themselves.

Yield: 24 mini quiche, or 8 toddler servings.
