SANTA FE TURKEY STUFFED PEPPERS

Ingredients:

  • 10 oz lean ground turkey
  • 3/4 cups canned black beans, rinsed and drained
  • 3/4 cups frozen corn
  • 1 chopped serrano pepper
  • 1 small diced tomato
  • 1 clove garlic, minced
  • 1 small chopped onion
  • 2 Tbsp chopped cilantro
  • 4 oz tomato sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 Tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 3-4 bell peppers, cut in half lengthwise (remove seeds and ribs)
  • 1/2 cup shredded cheese (mexican blend, or mozzarella)

Directions:

Preheat oven to 350.

In a large skillet brown the turkey. When the turkey is browned, add onion, garlic, black beans, cilantro, serrano pepper, diced tomatoes, tomato sauce, Worcestershire, and spices. Mix well and simmer on low, for 10 minutes. Remove lid, add corn and simmer an additional 5 minutes or until all the liquid reduces. Scoop mixture into pepper halves. Cover with tinfoil, and bake for 45 minutes. Remove foil, top with cheese, and bake for an additional 5 minutes. Garnish with reduced fat sour cream, hot sauce, scallions, and/or pickled jalapenos.
